Herbs de Provence is the workhorse of French cooking: lavender, thyme, rosemary, savory, and marjoram for roasted chicken, lamb, and vegetables. We stone-grind it in-house. Tarragon is the other essential, needed for béarnaise, vinaigrettes, and anything with eggs or fish. French grey salt from Brittany and chervil complete the foundations of classic French technique.
