Japanese Cuisine

Japanese cooking values restraint, and the spices here reflect that. Wasabi powder for dipping sauces and marinades. White and black sesame for finishing. For tea: sencha, genmaicha (green tea with roasted rice), jasmine pearls, and yuzu berry sencha. Brew these at 170-180°F, not boiling. Lower temperature means a cleaner, greener flavor without bitterness.
